These thrilling harissa beef sliders & cornichons are best served with salad leaves and sliced cherry tomatoes
Sink your teeth into these spicy bite-sized burgers – perfect with an edge-ofyour- seat thriller.
Makes 8
- 300g (10½oz) good-quality minced beef
- 1 red onion, very finely chopped
- 2 garlic cloves, crushed
- 2tbsp lightly beaten egg
- 2 heaped tsp harissa spice
- Salt and freshly ground black pepper
- Vegetable oil, for frying
- 8 mini bread rolls, halved
- 8tbsp mayonnaise
- A handful of salad leaves
- 4 cherry tomatoes, sliced
- Pickled red onion (optional)
- 8 cornichons (mini gherkins)
In a bowl mix together the beef, onion, garlic, egg and harissa. Season and, with wet hands, shape into 8 patties a couple of inches wide. Heat 1-2tbsp oil in a non-stick pan and fry the burgers for 2-3 minutes on each side, until cooked to your liking.
Preheat the grill. Arrange the rolls cut side up and toast for 1-2 minutes. Spread the bottom halves with mayonnaise and top with salad leaves, a cooked burger, a slice of tomato and pickled red onion (if using).
Put the lids on and skewer a cornichon through the top.
